This is excellent news!

Looking in the release ZIP file, on disk B there is a folder named "SOURCES" that looks interesting however most of the files in there are .HUF files which I'm guessing is some sort of Huffman compressed archive. Anyone know how to decompress these?

The source are for the runtime library routines. The description of .HUF is in section 1 of user's manual (hi-tech-z80-1989-october.pdf). Use the program DEHUFF.EXE to extract it. e.g., dehuff -x cpm.huf
I believe hitech software only runs in 32-bit DOS windows

Might well work in DOSBOX then even on a modern system (albeit a bit more slowly)
